  • Tortillas or wraps

Instructions:

  1. Preheat your grill or campfire grill grate.

  2. Toss the sliced vegetables with olive oil, salt, and pepper.

  3. Grill the vegetables over medium heat until they are tender and have grill marks.

  4. Warm the tortillas or wraps on the grill for a minute or two.

  • 1 lb (450g) smoked sausage or chorizo, sliced

  • 1 lb (450g) chicken breast, cubed

  • 1 large onion, chopped

  • 1 bell pepper, chopped

  • 3 cloves garlic, minced

  • 1 can diced tomatoes

  • 1 cup long-grain rice

  • 2 cups chicken or vegetable broth

  • 1 teaspoon paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Chopped parsley for garnish

Instructions:

  1. Heat a large cast-iron Dutch oven over the campfire or camp stove.

  2. Add the sliced sausage or chorizo and cook until browned.

  3. Remove the sausage and set it aside.

  4. In the same Dutch oven, add the chicken and cook until it's no longer pink.

  5. Remove the chicken and set it aside.

  6. Add the onions, bell pepper, and garlic to the Dutch oven and sauté until they are softened.
