YOUR MENU: Olive tapenade and goat cheese crostinis Cheesy potato stacks Roasted pears with prosciutto INGREDIENTS YOU'LL NEED: 1 cup pitted Kalamata olives 1/2 cup pitted green olives 2 cloves garlic, minced 2 tablespoons capers 1 tablespoon Dijon mustard 2 tablespoons fresh lemon juice 1/3 cup extra-virgin olive oil Freshly ground black pepper, to taste 2 tablespoons fresh parsley, chopped (optional) Baguette, sliced into 1/2-inch thick rounds 1 log (about 4-6 ounces) goat cheese, softened or plant-based goat cheese Olive oil, for brushing Freshly ground black pepper Fresh thyme or rosemary for garnish (optional) 4-6 medium Russet or Idaho potatoes, sliced into 1/8-inch thick pieces 1 stick (1/2 cup) butter, melted, or dairy-free butter 2 tablespoons fresh chives, chopped 2 cloves garlic, grated 1 cup grated parmesan cheese, dairy-free parmesan cheese for a vegan option, or shredded sharp cheddar or gruyere cheese, dairy-free cheddar cheese for a vegan option Kosher salt and black pepper 4 ripe but firm pears, halved and cored 8 slices of prosciutto, for a vegetarian version, substitute with toasted pecans and walnuts, chopped 2 tablespoons honey 1 tablespoon balsamic vinegar Freshly ground black pepper, to taste 1 tablespoon olive oil Fresh thyme leaves, for garnish (optional) EQUIPMENT YOU'LL NEED: oven preheated to 400°F small mixing bowl cutting board knife zester or grater citrus juicer measuring cups and spoons small whisk or fork platter or serving dish spatula or spoon small spoons for drizzling mandoline or sharp knife large bowl 12-cup muffin tin foil baking sheet butter knife large mixing bowl blender or food processor whisk or spoon
