YOUR MENU: Thai Pumpkin Curry Steamed Jasmine Rice Ingredients you'll need: For the Thai Pumpkin Curry: 1 1/2 lbs (700g) pumpkin or butternut squash, peeled, seeded, and cut into 1-inch cubes 1 can (14 oz) coconut milk 2 tablespoons red curry paste 1 tablespoon vegetable oil 1 onion, finely chopped 2-3 cloves garlic, minced 1 tablespoon fresh ginger, minced 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 carrot, sliced into thin rounds 1 1/2 tablespoons soy sauce 1 1/2 tablespoons brown sugar 1 teaspoon turmeric 1 lime, zested and juiced Fresh cilantro leaves, for garnish Salt and pepper to taste Equipment you'll need: large skillet or wok cutting board and knife can opener wooden spoon or spatula grater or zester measuring spoons and cups garlic press (optional) medium saucepan with lid fine mesh strainer fork rice cooker (optional)
